Our story

Frogs&Roos is the story of a French couple - Alexandre and Maureen - with a passion for cooking, travelling and meeting new people, who, while travelling in Australia, discovered that gastronomy can be a natural bridge between cultures.

At every stop on their road trip, as soon as Alexandre prepared a french meal and Maureen took her madeleines out of the oven, Australians stopped, curious, enthusiastic, often amazed, always convinced.

It was in these simple, gourmet and spontaneous moments that the desire to create Frogs&Roos was born: an experience at the crossroads of Australian conviviality and French savoir-faire.

The founders

Maureen Briançon

Co-founder, pastry lover and digital project manager with deeply rooted values

Maureen has always been passionate about pastry. But first, she studied journalism — where she met Alexandre — and began her career in Corsica. Together, they covered many stories about artisanship, short food circuits, and the value of working with what’s local and seasonal.

Living and working in Corsica — a French island celebrated for its preserved nature and strong sense of place — taught them how much local production matters. Without trying to preach, they discovered how choosing what’s nearby can help create more sustainable, human-focused ways of living and working.

Maureen later became a digital project manager in the tech industry, where she managed complex missions while continuing to dream of opening her own tearoom one day. During the Covid pandemic, she and Alexandre trained in marketing, determined to build something meaningful together.

Their time in Australia sparked the final idea: people were curious about French gastronomy, and delighted by Maureen’s madeleines. Frogs&Roos naturally emerged — a blend of French-Australian flavours, workplace well-being, and a deep love for slow, thoughtful food made with purpose.

Alexandre Bailly

Co-founder, field journalist turned workplace well-being artisan

Originally from the south of France, Alexandre began his career as a video journalist. He spent his early years working in Corsica — a Mediterranean island known for its strong cultural identity and deep connection to the land — where, alongside Maureen, he produced numerous reports on local artisans, short supply chains, and traditional know-how.

These experiences gave him a lasting appreciation for the value of local ecosystems. Not out of ideology, but from what he observed firsthand: choosing what’s nearby and made with care can quietly change everything — for producers, communities, and ourselves.

Later, Alexandre joined SNCF — the French national railway network — as a video journalist, covering themes like workplace ethics, well-being, and the future of work. After witnessing the rise of stress and burnout around him, especially in Paris, these issues took on new personal meaning.

With Maureen, he pursued training in digital marketing to gain the skills needed to build a business with purpose. During their journey through Australia, they were inspired by the coffee culture and how warmly locals welcomed French pastries. That’s when Frogs&Roos was born — a moment of comfort, flavour, and connection, designed to bring well-being back into the heart of work life.
